#01 – Ragi Roti

Ragi Roti is the most common Ragi recipe. It is a Ragi based version of Indian household chapati.

Ingredients

· 3 cups ragi flour
· 1 onion, finely chopped
· 1 carrot, grated
· 10 curry leaves, finely chopped
· A small bunch of cilantro/coriander, finely chopped
· 1/4 tsp red chili powder
· 1 tsp cumin seeds
· 1 tsp sesame seeds
· 1 cup water
· 1/2 tsp salt

Steps:

Firstly mix all the ingredients. Then add water slowly until you reach the desired consistency.

Take a clean wet cotton cloth. You can use a new handkerchief for this. Take a bowl of water put the cloth in it. Squeeze the excessive water and lay out the cloth on a flat surface.

Make Balls out of the ragi dough and Place them on this cloth. Slowly pat the dough using water to make a round shape.

Transfer the chapati to Pan and cook or until it changes color. Turn the roti and cook the other side similarly.

Unlike the previous recipe, if you are not fond of solid foods and like drinks, at your breakfast, we suggest you try out this delicious Ragi drink. It can be made sweet or salty depending on need and taste.

Ingredients

· 1/2 cup Ragi Flour
· 3 cups Water
· 1/4 cup Jaggery Grated
· 4-5 cups Milk
· 1 tsp Cardamom Powder

Steps to cook:

Dry roast the ragi flour for 8-10 minutes on low heat until it turns slightly brown. Now, Mix ragi flour and water in a pan.use a whisk to make the mixture smooth. Keep the pan on medium heat and cook the mixture until it thickens approximately 3-4 minutes. Add grated jaggery and cook for another 3-4 minutes while stirring continuously. Remove the pan from heat and cool the mixture.

Add milk and cardamom powder and mix well. Add more milk if you feel the Kanji is too thick. Serve hot or cold with a garnish of your choice.

#03 – Ragi Cookies

Well, who doesn’t like cookies they can be the ultimate snack and dessert. So why not give it a healthy twist with Ragi.

Ingredients

· 1 Cup ragi flour
· 1/2 Cup brown cane sugar
· 1/2 Tbsp green cardamom powder
· 2 pinches of ginger powder
· 1 Tbsp baking powder
· 1/2 Cup oil (rice bran)
· 1 egg (whisked)
· 1/2 Tbsp salt

Steps

Take a pan and mix Ragi flour with cardamom powder and Roast the mixture until it becomes a bit darker. Take a bowl, break an egg and whisk it. Mix well with ragi powder and sugar. Add oil and mix again the color of dough will become dark. Make round balls and flatten them using the palm of your hand. Preheat the oven for 5to6 minutes. Take a dish and put butter paper in it. Put the biscuits in it and bake for 8 minutes at 180 degree Celsius.

#04 – Ragi Porridge

Ragi porridge is good for health. It contains all the nutrition value of porridge combined with super grain Ragi.

Ingredients

· Ragi flour 1 cup
· Water 2 cup
· Buttermilk 1 cup
· Salt as per taste
· Small onion finely chopped 2 tablespoon
· Green chili 1
· Curry leaves as per taste

Steps to cook:

Take Ragi flour in a bowl and then mix it with one cup regular water so that no lumps are formed. Now heat 1 cup of water and add Ragi mix this well until to the consistency is not too thick. Take the desired amount of buttermilk and add this to mix. Stir well and add green onion, chilies and curry leaves.

#05 – Ragi Wheat Bread

Ragi bread is a go-to snack with nutrition value of Ragi. You can combine this bread with butter or jam.

Ingredients:

· 1 cup ragi atta
· 1 cup whole wheat flour (atta)
· 100 gm Gur (jaggery)
· 1 tsp refined oil
· 1/2 kg chopped spinach
· Cup of curd
· 1 tsp baking soda

Take a bowl and put all the ingredients mix well until it has the desired consistency. Spread the mixture in a baking dish and put it in an hour 40 minutes at 180 degrees.
